How to make Fiji Style Milk Barfi

Ingredients

Powdered milk 3 cups

Liquid milk 4 tablespoon

Colour few drops

Hundreds and thousands

Cardamom powder 1 tsp

Ghee 3-4 tablespoon

1½ cup sugar

¾ cup water

Method

 

Put 3 cups of powdered milk in a bowl. Add 1 teaspoon cardamom powder to powdered milk.

Add 3 to 4 tablespoon ghee to powdered milk and Mix thoroughly for few minutes.

Add color (I have added yellow to liquid milk)

Add 3 to 4 tablespoon of liquid milk (sprinkled on the mixture)

optional or you can use water instead of liquid milk. If you using water then sprinkle color on the mixture first and then add water.

Rub with hand into finely granular consistency.

 

Syrup

1 and a half cup sugar

¾ cup water

Bring to boil over medium heat and stir constantly

When it gets thick, almost 2 string consistency, Remove at further 2 string consistency. Check it should stick to your fingers.

Take out one cup mixture, just in case syrup doesn’t work out.

Add the mixture to the syrup and mix thoroughly.  Set the mixture in the tray.

Add hundred and thousands to garnish on top. And cut mixture into cubes.

Let it cool and then serve.

Yummy, very yummy dessert.
